Brioche from Eastern Europe will revive your childhood memories, those of returning from school, those that smell of brioche and chocolate. Babka means “grandmother”, which explains its comforting side which almost makes you want to snuggle up in it!

7cl of milk (70g)

Description

1- Dans un saladier ou le bol d’un robot, versez le contenu du grand sachet et la levure.

2- Ajoutez le lait tiède (pas chaud !), l’œuf, 40 g de beurre en dés puis pétrissez 10 min.

3- Couvrez la pâte et laissez reposer 1h minimum à température ambiante (entre 22 et 25°C)

4- Préparez la garniture : faites fondre 25 g de beurre avec le sachet de chocolat.

5- Dégazez la pâte : sur le plan de travail, pressez-la avec la paume de votre main pour l’étirer puis retournez-la sur elle-même. étalez-la en un rectangle d’environ 30 x 40 cm.

6- Répartissez la garniture puis enroulez la pâte par le petit côté pour obtenir un gros rouleau. Formez deux brins en coupant en deux dans la longueur et tressez-les, en gardant les rayures de chocolat vers le haut (retrouver l’étape dans la vidéo ci-dessous !).

7- Placez-la tresse dans un moule à cake et laissez reposer 1h minimum à température ambiante.

8- Préchauffez le four à 180°C et faites cuire 20 - 25 min.

9- Pour une babka bien brillante, faites fondre à la casserole 2 c.à s. (15 g) de sucre avec 2 c.à s. (10 g) d’eau et badigeonnez la babka sortie du four.
