Our pasta is made with durum wheat grown directly on the farm.
The only ingredients are semolina and water.
We use circular bronze dies and dry the Tuffoli at a minimum temperature of 36°C and a maximum of 55 °C for 22 hours.
They are 40 mm long and 26.7 mm in diameter.
Cooking time is 10-12 minutes.
Description
At Mancini Pastificio Agricolo we produce pasta exclusively with the durum wheat that we grow and harvest annually in the fields surrounding us here in the heart of Le Marche region, Italy, resulting every year in a “seasonal” product reflective of each year's agricultural conditions.
