This caviar is made from the Siberian sturgeon Acipenser Baerii, between the ages of 7 and 10. It is made at the Domaine in Neuvic with all the know-how and quality commitment specific to Caviar de Neuvic. It has a medium grain size with a melting texture and a colour shade from black to light grey. It is very well balanced with buttery, fresh nutty and marine notes.

Serving
It is best to take your caviar box out of the fridge 5 minutes before serving. Arrange it on a bed of ice that will keep it fresh throughout the tasting. Prefer a small mother-of-pearl spoon that will not break the eggs and will not be subject to oxidation.
Usually caviar is simply eaten with a spoon with a glass of vodka, a glass of champagne or a glass of dry white wine. To combine it, blinis, eggs, potatoes, fish and seafood are the sure values. To be more original: combine with a veal or beef tartare !
